The fascinating origin of coffee and its most well-known varieties:
Coffee, one of the most consumed and appreciated beverages worldwide, has an origin as fascinating as its aroma.  Its story begins in Ethiopia in the 15th century, where, according to legend, a shepherd named Kaldi observed unusual behavior in his goats: after eating certain red berries from a wild shrub, they became especially active and alert. Intrigued, Kaldi tasted the berries and discovered their stimulating effect. Thus, coffee was born, although initially it wasn't consumed as the hot beverage we know today, but rather in the form of dried or cooked berries.

Over time, coffee was adopted by religious communities in the Arab world,  who used it to stay alert during nightly prayers. In the 17th century, it arrived in Europe, where it quickly became popular among the aristocracy and a symbol of sociability and refinement. In the 19th century, with the rise of international trade, its consumption became globalized, transforming it into a universal beverage present in all social classes and cultures.

Today, coffee is valued not only for its flavor and aroma, but also for the diversity of its varieties and preparation methods.  Among the best-known types of coffee are:

Arabica ( Coffea  arabica):   This is the most prized variety for its smooth flavor, delicate aroma, and lower caffeine content. It is grown at high altitudes and accounts for about 60% of global production. Its flavor profile typically includes floral,  fruity  , or chocolatey notes. Robusta (Coffea canephora):  More resilient and easier to cultivate, it contains twice the caffeine of Arabica. Its flavor is stronger, more bitter, and earthier. It is commonly used in espresso blends for its dense body and ability to form a thick crema. Liberica:  Less common, it is grown primarily in the Philippines and West Africa. Its bean is larger, and its flavor is exotic, with fruity, floral, and sometimes smoky nuances. Excelsa:  Considered by some to be a sub-variety of Liberica, it is grown in regions of Southeast Asia. It offers a complex and fruity flavor, with medium acidity and a light mouthfeel.
