Ingredients:
3 medium potatoes (approx. 600 g)
Salt to taste
1 teaspoon of garlic powder
100g of finely grated mozzarella cheese
Hot peppers to taste (chili powder can be used)
7 tablespoons of potato starch (you can use cornflour as an alternative)
Fresh chopped parsley to taste
Grated Parmesan cheese to taste

Preparation:
Peel the potatoes, cut them into chunks, and boil them in salted water until very soft. Then drain them completely.
Mash the still-hot potatoes until you have a smooth, lump-free purée. Let it cool for a few minutes.
Stir in the garlic powder, chili peppers, chopped parsley, shredded mozzarella cheese, and potato starch. Mix everything until you have a compact, moldable dough. Adjust the salt if necessary.
Form the sticks
Take portions of the dough and form elongated sticks (like croquettes or thick sticks).
Place them on a baking sheet lined with parchment paper, add grated Parmesan cheese to taste for crunch, then drizzle with olive oil.
